Зерненый творог (Cottage cheese)
В Центральной и Восточной Европе, в Израиле и США Зерненый творог имеет огромную популярность. Это очень вкусный и низкокалорийный сорт творога, производимый из молока коров. Белоснежные зерна гладкие и упругие, напоминают крупный речной жемчуг неправильной формы. В него добавляют слегка соленые сливки, и это придает продукту отличный вкус — нежный, влажный и сливочный.
История происхождения
Родина Зерненого творога — страны Северной, Центральной и Восточной Европы. В Южной части Европейского континента он не изготовляется. В славянской культуре термин «творог» означает сквашенное и обезвоженное молоко, которое «сотворилось» (сделалось) твердым. Издавна творог делали пресным и однородным или слегка солоноватым и зернистым.
Производство
Производственный процесс может быть укороченным (до 6 часов) и медленным (до 15 часов). В большинстве случаев используется укороченный процесс производства. Во время него нормализованное молоко пастеризуют, остужают до 32 С и смешивают с сычужной закваской. В помощь закваске добавляют хлорид кальция. Готовое зерно смешивают с подсоленными сливками.

1 1/2 lb. cottage cheese
3/4 lb. feta cheese
2 (10 oz.) chopped spinach
6 eggs
3 sticks melted butter
1 pkg. phyllo dough
Scallions to taste
Eight layers of phyllo, butter each layer, layer of mixture. Four layers of phyllo, butter each layer, layer of mixture. Eight layers of phyllo, butter each layer, fold over edges. Bake at F 350 degrees for 1 hour, top is brown.

Ага, противный по мне тоже. Я могу его есть иногда, покупаю только такие маленькие баночки, где в ячейке джем.
